What's for supper! Baked Curly Fries

Prep Time: 10 minutes
Cook Time: 20 to 25 minutes depending on your oven or desired crispiness
Ingredients
1 large sweet potato, 1 large sweet potato makes enough for two people (or you can use regular potatoes, turnips, beats, or carrots)
1 tbsp olive or avocado oil
1 tsp sea salt
1 tsp Montreal steak spices (optional)
Fresh herbs; rosemary, thyme, chives or whatever you prefer or have (or dried herbs de Provence)
Instructions
Preheat oven to 400 degrees F.
Wash and do not peel the potatoes. To spiralizer the sweet potatoes simply place it on the Spiralizer and turn the handle. ( The Spiralizer has different blade sizes, I use the smallest one)
Spread them out over foil or parchment-lined baking sheets.
Coat them with olive oil, sprinkle with sea salt, and pepper.
Place trays in oven and bake for 20 to 25 minutes depending on your oven or desired crispiness.
Half way through baking remove from oven, stir up the fries, add the fresh herbs and place back in the oven. Bake for another 10 minutes or so. You can reduce the heat if you like.
Remove baking sheet from oven, serve hot and enjoy!
Tips
1. Do not overcrowd the spirals on the baking sheets, you can use two sheets.
2. I often make them as veggies pockets and put them on the BBQ.
4. Watch them carefully, you can remove the crispier fries and put back in oven as not all will cook at the same time.
